
Ingredients:
500g Spinnach
50g Butter
1 Onion
2 Carrots
4 sprigs Parsley
(Bouquet Garni – Parsley, Bay, Thyme)
Salt, Pepper, Nutmeg
850 mls Stock
150 mls Cream
Prep time: 40 minutes
Discard Spinnach stalks, wash and chop roughly
Melt butter, add roughly chopped Onions, Carrots, Spinnach – 5 minutes
Add Stock, Parsley, Bouquet Garni
Bring to the boil and season
Simmer for 30 minutes
Blend (when all vegetables are soft)
Return to the pan, check seasoning
At the last minutes add cream – do not boil
